VARIEDADES, COLORES Y SABORES

PICUAL
Es la variedad más importante del mundo, representando el 50% de las aceitunas y árboles de España y el 20 % mundial. Es predominante en la zona de Jaén. Su nombre se debe a la forma del fruto como un pezón pronunciado terminado en pico.
Son aceites poderosos, de gran frutosidad, un amargor intenso y tonos picantes. En esta variedad existen diferencias entre los olivos de llano y de montaña, los primeros son aceites de gran cuerpo, amargos y con cierto sabor a madera. En la montaña suelen ser mas dulces y con aromas frescos y agradables. Son los aceites más estables que existen, significando esto un mayor periodo de vida y un excelente comportamiento frente al uso térmico en la cocina.
